In liquor-making enterprises, there are two processes, one is fermentation and the other is distillation, which must be produced by steam. However, at present, many domestic liquor brewing processes still use traditional workshop production, lack of continuity and compactness between the various processes. In addition, the primitive process equipment has also led to the low overall production efficiency of the industry, large energy consumption of grain raw materials, water and electricity, and serious pollutant emissions. The traditional workshop-style production mode has seriously restricted the future of the industry. Among them, the waste gas from traditional coal-fired boilers in liquor enterprises contains more pollutants. Although various provinces and municipalities have issued different policies on the elimination of small boilers burning coal, heavy oil and wood, the direction is the same: low consumption and low emission is the basic, and the ultimate goal is to achieve the ecological production of wine enterprises.

Fermentation and distillation are two main uses of distillery boilers. Fermentation is to ferment the mixture of starter and grain to produce alcohol; distillation is to extract alcohol from grain by distiller, condenser and so on to produce original pulp wine. Winery fermentation, distillation and other needs a larger amount of steam, if coupled with heating, bathing heat, more steam. Therefore, most distilleries choose coal-fired steam boilers as the preferred boilers for fermentation and distillation. With the increasing awareness of environmental protection in China, a considerable number of local governments limit the use of small coal-fired boilers. Gas boilers, biomass boilers and other equipment emerge as the times require. Their low-cost operation, no nitrogen oxides and sulfide pollution are favored by wineries and other enterprises.
